the value of variable in webhook connected to zapier is not coming

I have set the information about attribute (email) as in the lessons(tutorial), and I sent it to zappier where I am getting information except the variable that I created to capture the email address from the webhook.
If I use another webhook website, I get the value of variable to collect email. But, I want to use zapier to receive email notification where all information of webhook will be shared. I want to know why data of variable is not coming to zapier.
