Email Contact Info

How can I collect all the data a customer enters and send it in an email?
I understand how to collect the email address and send it but I can not figure out how to send all of the entries.. example: [ResponseTo interaction=0001 fallback=TEXT] [ResponseTo interaction=0002 fallback=TEXT] and then send all the users contact info in an email.
